Ingredients to make Spiral Mango Noodle Salad recipe
For the Salad:
- 3 lb spiralized unripe mango
- 1 lb salad greens
- 1 lb shredded cabbage
- 4 oz red peppers, julienned
- 2 tbsp green onions, chopped
- 1 tbsp sesame seed mixture
- 8 fl oz mango sesame vinaigrette (recipe below)
For the Mango Sesame Vinaigrette:
- 9 fl oz balsamic dressing (store-bought or homemade)
- 1 fl oz apple cider vinegar
- 1 fresh ripe mango, diced ½ inch
- 2 tsp sesame oil
Instructions
Make the Mango Sesame Vinaigrette
- Combine all vinaigrette ingredients in a blender.
- Blend for about 1 minute or until smooth.
- If large mango pieces remain, continue blending until the dressing is creamy.
- Transfer to a jar or storage container and refrigerate until ready to serve.
Build the Mango Noodle Salad
- In a large mixing bowl, combine spiralized mango, cabbage, red peppers, and salad greens.
- Pour the mango sesame vinaigrette around the sides of the bowl and toss until evenly coated.
- Using tongs, twist and lift a portion to create a neat spiral mound on each plate.
- Garnish with green onions and a sprinkle of sesame seed mixture.
