Ingredients to make the Trendy Mango Ice Cream Pops Recipe
- 1 cup ripe mango, pureed
- 1 cup heavy whipping cream
- ½ can sweetened condensed milk
- 1 tbsp coconut oil
- 1 tbsp freeze-dried strawberry powder (or red food coloring)
- 1 cup yellow chocolate candy melts
- 6 popsicle sticks
- Mango-shaped silicone molds
Instructions
- Make the Mango Puree
Peel and pit the mango, then blend the flesh until smooth. You’ll need 1 cup of mango puree. - Whip the Cream
In a mixing bowl, use a hand mixer to whip the heavy cream until stiff peaks form. - Combine the Mixture
Add sweetened condensed milk to the whipped cream and mix on low speed until smooth.
Then add the mango puree and whip again until everything is fully blended and creamy. - Fill the Molds
Pour the mango mixture into the silicone molds. Insert a popsicle stick into each one.
Freeze for at least 6 hours or until solid. - Melt the Chocolate
Place the yellow candy melts in a microwave-safe bowl. Add 1 tbsp of coconut oil.
Microwave in 30-second intervals, stirring each time, until melted and smooth. - Coat the Ice Cream
Line a tray with parchment paper.
Remove one ice cream pop at a time from the mold and quickly dip it into the melted chocolate for an even coating.
Place the coated pop on the tray and freeze again until the shell hardens. - Add a Realistic Finish (Optional)
Lightly brush strawberry powder or a bit of red food coloring on one side of the pops to create a natural mango-like gradient.
