Ingredients of Mango lab e Shireen

  • 1 cup mango chunks
  • 1 1/4 cups water
  • 1 packet (80g) instant strawberry jelly powder
  • 1 teaspoon china grass powder
  • 1 1/4 cups water
  • 1 packet (80g) instant mango jelly powder
  • 1 teaspoon china grass powder
  • 1 1/2 liters milk
  • 1/2 cup sugar or to taste
  • 5-6 tablespoons custard powder, vanilla flavor, or as required
  • 1/2 cup milk
  • Ice cubes
  • 200ml whipping cream
  • 1/2 cup (60g) boiled colored vermicelli
  • 1 cup mixed fruit cocktail, strained
  • Red jelly cubes
  • Yellow jelly cubes
  • 1/4 cup chopped almonds
  • 1/4 cup chopped pistachios
  • Mango puree
  • Mango cubes
  • Sliced dry nuts

Instructions

  1. In a blender jug, add the mango chunks and blend well to make a puree. Set aside.
  2. In a saucepan, add 1 1/4 cups water and bring to a boil. Add the strawberry jelly powder and china grass powder and whisk well.
  3. Transfer the jelly mixture to a flat dish and let it cool at room temperature until set. Cut into cubes and set aside.
  4. Repeat steps 2 and 3 with the mango jelly powder.
  5. In a wok, add the milk and sugar and mix well. Bring to a boil.
  6. In a bowl, whisk together the custard powder and 1/2 cup milk.
  7. Pour the dissolved custard into the boiling milk and whisk well. Continue to cook on low flame until the custard thickens.
  8. In a large bowl, place ice cubes and pour another bowl over it. Transfer the prepared custard to the bowl and let it cool while stirring on the ice cubes.
  9. Once the custard is cool, add the mango puree, whipping cream, and whisk until well combined.
  10. Gently fold in the boiled colored vermicelli, mango chunks, mixed fruit cocktail, red jelly cubes, yellow jelly cubes, chopped almonds, and chopped pistachios.
  11. Pour the mixture into a serving dish and garnish with mango puree, mango cubes, sliced dry nuts, and red and yellow jelly cubes.
  12. Serve chilled.
