1. Vanilla Cake
- Preheat your oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large mixing bowl, cream together the butter and sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Begin and end with the dry ingredients.
- Divide the batter evenly among the prepared pans and smooth the tops.
- Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
2. Mango Curd

- In a saucepan, combine the mango puree, sugar, lemon juice, and egg yolks.
- Cook over medium heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon.
- Remove from heat and stir in the cubed butter until melted.
- Strain the curd through a fine-mesh sieve into a bowl to remove any lumps.
- Allow the mango curd to cool completely before using.
3. Vanilla Buttercream Frosting
- In a large bowl, beat the softened butter until creamy.
- Gradually add the confectioners’ sugar, one cup at a time, beating well after each addition.
- Add the milk and vanilla extract, and continue to beat until smooth and fluffy.
4. Assembling the Cake
- Place one layer of the vanilla cake on a serving plate. Spread a layer of mango curd over the top.
