Ingredients

For the Vanilla Cake

  • 2 ripe mangoes, peeled and diced
  • 1/2 cup granulated sugar
  • 1/4 cup lemon juice
  • 4 large egg yolks
  • 1/4 cup unsalted butter, cubed

For the Vanilla Buttercream Frosting.

  • 1 cup unsalted butter, softened
  • 4 cups confectioners’ sugar
  • 1/4 cup whole milk
  • 1 teaspoon vanilla extract

Instructions

1. Vanilla Cake

  1. Preheat your oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large mixing bowl, cream together the butter and sugar until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Begin and end with the dry ingredients.
