Mango crumble bars are a delicious and easy-to-make dessert that is perfect for any occasion.
They are made with a simple shortbread crust, a sweet and juicy mango filling, and a buttery crumble topping. These bars are best served warm with a scoop of vanilla ice cream or whipped cream.
Ingredients of Mango Crumble Bars
For the Crust and Crumble
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/4 teaspoon salt
- 3/4 cup unsalted butter, cold and cubed
- 1/2 teaspoon vanilla extract
For the Mango Filling
- 2 cups fresh or frozen mango chunks (thawed and drained if using frozen)
- 1/4 cup granulated sugar
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
For the topping:
- 1/2 cup all-purpose flour
- 1/4 cup brown sugar
- 1/4 cup granulated sugar
- 1/4 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 cup unsalted butter, chilled and cubed
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×9-inch (23×23 cm) square baking pan. You can also line it with parchment paper for easy removal.
- In a large mixing bowl, combine the all-purpose flour, 1/2 cup granulated sugar, and 1/4 teaspoon salt for the crust and crumble. Mix them together.
- Add the cold, cubed unsalted butter and vanilla extract to the dry ingredients.
- Using a pastry cutter or your hands, work the butter into the dry mixture until it resembles coarse crumbs.
- You can also pulse these ingredients in a food processor for a few seconds.
- Take about 2/3 of this crumb mixture and press it evenly into the bottom of the prepared baking pan to create the crust.
- In another mixing bowl, combine the mango chunks, 1/4 cup granulated sugar, cornstarch, and lemon juice. Toss everything together until the mango chunks are coated evenly.
- Spread the mango filling over the crust in the baking pan.
- Sprinkle the remaining crumble mixture evenly over the mango layer, creating a nice crumbly topping.
- Bake in the preheated oven for 40-45 minutes, or until the top is golden brown and the mango filling is bubbling at the edges.
- Remove from the oven and let it cool in the pan on a wire rack for about 30 minutes.
- Once cooled, you can refrigerate the pan for an hour or so to help the bars set and make cutting them easier.
- Once chilled and set, use a sharp knife to cut the mango crumble bars into squares.
- Serve and enjoy your delicious mango crumble bars!
These bars are perfect for a snack or dessert, and they can be stored in an airtight container in the refrigerator for a few days.
