Ingredients of Mango Crumble Bars

For the Crust and Crumble

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, cold and cubed
  • 1/2 teaspoon vanilla extract

For the Mango Filling

  • 2 cups fresh or frozen mango chunks (thawed and drained if using frozen)
  • 1/4 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice

For the topping:

  • 1/2 cup all-purpose flour
  • 1/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 cup unsalted butter, chilled and cubed

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9-inch (23×23 cm) square baking pan. You can also line it with parchment paper for easy removal.
  2. In a large mixing bowl, combine the all-purpose flour, 1/2 cup granulated sugar, and 1/4 teaspoon salt for the crust and crumble. Mix them together.
  3. Add the cold, cubed unsalted butter and vanilla extract to the dry ingredients.
  4. Using a pastry cutter or your hands, work the butter into the dry mixture until it resembles coarse crumbs.
  5. You can also pulse these ingredients in a food processor for a few seconds.
  6. Take about 2/3 of this crumb mixture and press it evenly into the bottom of the prepared baking pan to create the crust.
  7. In another mixing bowl, combine the mango chunks, 1/4 cup granulated sugar, cornstarch, and lemon juice. Toss everything together until the mango chunks are coated evenly.
  8. Spread the mango filling over the crust in the baking pan.
  9. Sprinkle the remaining crumble mixture evenly over the mango layer, creating a nice crumbly topping.
  10. Bake in the preheated oven for 40-45 minutes, or until the top is golden brown and the mango filling is bubbling at the edges.
  11. Remove from the oven and let it cool in the pan on a wire rack for about 30 minutes.
  12. Once cooled, you can refrigerate the pan for an hour or so to help the bars set and make cutting them easier.
  13. Once chilled and set, use a sharp knife to cut the mango crumble bars into squares.
  14. Serve and enjoy your delicious mango crumble bars!

These bars are perfect for a snack or dessert, and they can be stored in an airtight container in the refrigerator for a few days.
